Here's a recipe for Wassail, posted on rec.food.recipes by Dale Wyttenbach.
Middle English "waes haeil" : "be healthy", i.e. a toast.

1 gal. apple cide
8 cinnamon sticks
1 lemon & 1 orange, sliced
1 Tbsp. whole cloves
1 Tbsp. allspice

- simmer this mixture for 1 - 2 hours, then add

1 gal. white wine
2 cups rum

- and heat for 10 minutes.  Serve HOT.
